OUR STORY

In 1988, the brand name Äng Kusina® was officially established, becoming the trademark for our modern door-dash-like “binalot” delivery and catering services. Its humble beginnings date back to 1944, when it started as a small carinderia—a roadside sari-sari store with wooden benches. Owned by our grandmother, the store served the local community. Over time, my father, who worked as a bread deliveryman using a horse-drawn rig called a caritela, extended the store to the side of the house and build a small "turo-turo" eatery.

The carinderia initially served simple meals of fried eggs, fried rice, and/or bread—the three basic staples of the common tao—paired with a cup of coffee on the side. Gradually, customers began requesting add-ons toppings like longanisa, tuyo, tocino, barbeque, and tapa. These add-ons quickly became instant hit with our regular paroquianos, earning the name the Seven Classic Silogs®.

In order to make ordering more quicker and easier, my tatay introduced the term "Silog," a blend of Sinangag (fried rice) and Itlog (egg), as the foundation of his menu. He creatively combined this basic catch-tag with other add-ons to form catchy names such as Tapsilog (tapa, sinangag, and itlog), Longsilog (longanisa, sinangag, and itlog), and Tocsilog (tocino, sinangag, and itlog). On top of these, he also coined Tikalog for tinapay (bread), kape (coffee), and itlog (egg). Soon, the term "Silog" quickly gained traction and became a buzzword, spreading across barrios and towns. People from all walks of life eagerly lined up to experience the "Silog Phenomenon."

As the popularity of Silogs grew, in due course Äng Kusina ng Silog® or the House of Silog® was born. Over the years, its menu also expanded beyond its classic Silogs to include other traditional Filipino dishes, offering an array of flavors ranging from sweet, sour, and salty to the distinct "ang sarap naman" taste.

In 1988, the whole family, now residing in the United States, decided to honor our grandmother's legacy by reviving the eatery and naming it Äng Kusina®. While the focus shifted away from the Silogs alone, venturing into various food fusions, the legacy remained intact. Today, Äng Kusina® offers a diverse menu featuring countless add-ons paired with the timeless Silogs. Despite more restaurants imitated our wide arrays of silogs, Äng Kusina® will always be known as “The House Where Silogs Originated: Serving Silogs Since World War II.”
